"I first met Sean whilst we were working in a very popular restaurant in Meribel, France. Having spent his last 10 years training and working in his home city of Sydney, Australia. He began his career at the Banjo Patterson restaurant and after completing a four year apprenticeship he moved to the Woolwich Pier Hotel overlooking the World famous Sydney Harbour. When an opportunity arose for Sean to work alongside an experienced cordon Blue Chef in Meribel, France he didn't hesitate to accept the challenge. In just two years he worked his way up to head chef at the La Tsarretta restaurant. In 2003 Sean came to stay with me and my family at our home in North Cornwall and five years on he remained here to raise a family of his own. For Sean and I Samphire is a long awaited opportunity to offer our services and skill to provide Bude and the surrounding area with a place to come and try local produce prepared and cooked in a friendly comfortable and intimate atmosphere."
